Caraway Roasties

New potatoes can be a bit dull without lashings of butter and even then they lack the more-ish-ness or depth of the much loved roastie. So, here is a quick and healthy alternative to the butter drenched spuds we prepare on Sundays when we have time to burn.

Tips – Use a low sided roasting tray to help the heat get to all potatoes and reduce the chance of them sweating before going golden.

Serving suggestion – These quick roasties go just as well with a roast joint of meat as they do with a salad and quiche – bridging the gap between the humble new potato and the glorious Sunday roastie!



New potatoes – variety of your choice.
Lots of garlic cloves – unpeeled.
Olive oil
Fresh herbs – I like to use parsley and chives.
Rock salt and black pepper from a mill.


  1. Preheat the oven to 200 degrees celsius.
  2. Toss your new potatoes together with all the ingredients, other than the fresh herbs. Place into a low sided roasting tray and place in the oven for around 40-50 minutes, turning every 15-20 minutes.
  3. Finally remove from the oven, add the chopped fresh herbs and serve.
