Caramelised apple, almond and blueberry clafoutis

This is a quick, tasty but impressive dessert, and the good thing is most of the ingredients you will have at home!

Serves 4


Ingredients

  • Handful of caster sugar
  • 3 apples we used Braeburn apples but cox apples should be fine
  • Handful of blueberries

For the batter:

  • 200ml double cream
  • 2 eggs
  • 1 egg yolk
  • 2 tbsp caster sugar
  • 2 tbsp ground almonds
  • 2 tbsp plain flour

Method

  1. Preheat the oven to 190c
  2. In a dry frying pan melt a handful of sugar, once the caramel starts to form add in the peeled and cored apple slices and cook till soft. Put aside.
  3. In a mixing bowl add together all the ingredients, we use a stick blender or hand whisk to make sure that the flour is all combined and there are no lumps.
  4. Line a shallow baking tin and pour in the batter, then gently place the apple slices on top and scatter over a handful of blueberries.
  5. Pop in the oven for 25 mins or till golden brown and serve with some cream or ice cream.
