Crispy Chicken with lemon herby mayonnaise
Sunday is a day for relaxation, good food and a reset for the week ahead. A roasted chicken is always something that everyone loves, and this crispy roasted chicken with a lemony herb mayonnaise is no exception.
Perfect for a summer afternoon with the family or entertaining friends, you can team it with fresh crunchy salads, vegetables, some fresh sourdough. (recipe coming soon!)
Ingredients
- 1 small chicken
- 1 tsp sumac
- 2 tsp cumin
- 1 tsp dried marjoram
- 1 tsp onion salt
- 2 tbsp vegetable oil
- 2 tbsp good quality mayonnaise
- 1 tbsp fresh marjoram
- 1 tbsp oregano
- 1 whole lemon zested and juiced
Method
- Rub the whole chicken all over with the mix
- Place on a shallow baking tray with a wire rack, this enables the heat to circulate around the chicken
- Roast at 200c for 35-45 mins for a small chicken (if larger check your packet for tips). Tip: check the juices are running clear in between the thigh and breast to ensure it is cooked through.
- For the mayonnaise add 2 heaped tbsp of good quality mayonnaise, roughly chop the marjoram and oregano and add in some finely zested lemon and a squeeze of lemon juice.
- Carve and serve with the lemon and herb mayonnaise and sides of your choice.
